Our vineyards are located in the production area DOC Friuli Annia, near Marano’s lagoon.
The
vites are grown following the classic systems called Silvot Ridotto and
Guyot. This system has been chosen because of the characteristics of our
climate and soil.
The vintage period typically stars around the 25th of August for the sparkling wine’s basis, and from the 15th of September for the white and red wines.
We gather the grapes by hand. There is how we actually do the wine – making.
First we bring the grapes to the cellar, and then we start taking off the
acini from the actual grapes in a very soft and slow way.
To
the must that we obtain we afterwards add the enzymes to help the clarification
and to extract the perfumes and the aromas. We then proceed with the controlled
soaking for 15 days.
To the cleaned must is inoculated the selectioned yeast. The fermentation lasts for almost 20 days and at the end we proceed with the unravelling, the filtration and the bottling.
The analytic data of our wines show an alcoholic gradation that goes from
11% to 13% of volume. While the sparkling wine’s acidity is 6,1 ca.
